Who doesn't love a frozen treat? If you just raised your hand, go away. This post isn't for you.
This post is for the daiquiri-loving, "cool" grown-ups hanging out by the pool, craving a tasty treat with a little kick. You can substitute your favorite liqueur, vodka, tequila or rum for the peach schnapps I used in this recipe.
By the way, did you know "Popsicle" is a registered trademark, and not a generic term for an ice pop? True story. Read about it on Wikipedia!
Tropical Schnappsicles
Ingredients:
meat of 2 mangoes, chopped
1 c. fresh or frozen raspberries
1 1/2 oz. peach schnapps or other liqueur of choice
2 T. cane juice crystals or raw sugar
juice of one lime
1/2 c. pineapple juice
handful fresh mint leaves(I grabbed mine out of my garden)
Directions:
In a blender, puree mangoes and raspberries.
Add schnapps, sugar, and fruit juices and blend until smooth. Add mint leaves and pulse until leaves are chopped into tiny flecks.
Pour into ice pop molds and freeze.
Tip: If the pops are difficult to remove from molds after freezing, run them under a little hot water, until the pops slide out easily.
